Stainless Knives
Stainless knives are those that have been created with
stainless steel. This material was originally known as "non-rusting
steel." Its invention has been attributed to a man named Harry
Brearley. This occurred in 1913.
Unfortunately, these first stainless knives were not very adept at
cutting. It wasn't until 1924 that a more efficient version was created.
It was improved by a man named W.H. Hatfield.
Stainless knives created from this improved 18-8 material were 18%
chromium and 8% nickel. Today, 440 stainless is the cutlery standard.
This includes more carbon which results in a sharper edge.
